Beans & Wienies gets Upgraded! PDF Print E-mail

I had a craving for beans and wienies the other day. It's one of those strange cravings that just comes out of nowhere. However, we don't normally have hotdogs in the house. I sort of have a thing against them. Because of this, I had to come up with an alternative. We didn't have any brats so, my only other option was ring sausage. Which, I just happend to have. here is the ingredients rundown.

Tom's Beans and Smoked Sausage:

2 rings of Smoked Sausage

2 slices of Bacon

1 medium Yellow Onion

1 Celery Heart

1 28oz can of Homestyle Baked Beans

2 cans of Kidney Beans (light red)

1/3 cup BBQ Sauce (I used Cranberry)

3 tbs Rub or Seasoning (I used Gettin' Roasted)

1/4 cup Brown Sugar

3 tbs Grape Seed Oil

 

It all starts with heating up the oil in a LARGE pan over medium heat. Dice the veggies and bacon, toss them into the oil. Then cut the sausage into 2 inch pieces and toss them in the pan with the veggies.

Once the onions started to soften, then it is time for the beans. Dump the baked beans in. Then drain off half the liquid from the kidney beans and dump both cans in as well. Next comes the BBQ Sauce, Rub/seasoning, and brown sugar. Let this all come to a simmer.

Once it comes to a simmer, drop it down to lower heat and continue to cook until the Kidney Beans have softened.

All that is left is to dish it up and grab some potato chips.

This is comfort food on a whole new level. One bowl and you're full but, the sweet saltiness is a total craving crusher. The spiciness of the sausage pairs well with the sweetness of the beans. You will be glad you tried this.

Big Butz Fried Chicken & Bacon Burger PDF Print E-mail

I gazed into the freezer and the first two things that caught my attention were ground chicken and bacon. Why not put the two together? This is what I ended up with.

Big Butz Fried Chicken & Bacon Burger!

Ingredients:

1 lb Ground Chicken

1/2 lb Bacon

3/4 c Corn Meal

1/2 c Whole Wheat Flour

3 tbs Gettin' Roasted Season All

2 tbs Sugar

1 1/2 tbs Cranberry BBQ Sauce

1 tbs Chicken Dust

4 c Canola Oil

1/2 c Extra Virgin Olive Oil

 

Start by mixing together the Corn Meal, Flour, Sugar, and Gettin' Roasted Season All in a bowl. This will be your breading in a bit.

Next I start a pan on the stove over medium heat with the Canola and Olive Oil.

Then it's meat time!

Dice up 1/2 lb of Bacon.

Combine the bacon with the chicken in a bowl then add the Chicken Dust, Cranberry BBQ Sauce, and mix well.

Form the meat into patties then press into the breading to fully coat.

From there, it's into the hot oil. Let them cook for about 3-5 minutes a side until the bottom turns a nice golden brown then flip them.

Once flipped, allow to cook for 2-4 minutes more until the bottom has turned a golden brown to match the other side.

If you like cheese on your burgers, wait till you remove these from the oil and then top with some grated cheese. It will mealt as the burger sits.

All that's left is to sink your teeth into these tasty creatures, whether you are eating them with a fork or on a bun, they bring the flavor in a major way. The blending of flavors is a dance upon your taste buds, each one having a turn at taking the lead and the crisp crust pairs well with the juicy moist inside. The only thing that will disappoint you about these is when they are all gone.
